    1 cucumber, chunked
    1 tomato, chunked
    1 onion, cut into thin slices
    2 oz feta, crumbled
    12 olives, sliced
    1 lemon
    2 T olive oil


Mix all ingredients in mid-sized bowl, except lemon and oil. Juice lemon over salad. Drizzle oil over salad. Toss gently, then allow flavors to mingle 5-30 minutes.

Serves two as a vegetarian meal with pita bread, or four as a side dish.
