    8 Green Bell Peppers
    Ground Turkey
    Taco Seasoning
    1 Onion
    1 Can sweet corn
    1 can diced tomatoes
    1 can black beans
    1 cup rice
    2 cans enchilada sauce
    1 cup shredded cheddar cheese


Cut tops off of peppers and clean seeds out using a spoon.
Boil peppers until they become soft.
Set aside and allow to cool.

Cook ground turkey with taco seasoning.
Add black beans, corn, chopped onion, tomatoes, and rice to turkey.
Stuff pepper with turkey mixture.
Place in backing pan.
Pour 2 cans red enchilada sauce over peppers.
Cover with tinfoil.
Bake at 350 for 10-15 minutes until sauce begins to bubble.
Remove tinfoil and sprinkle tops of peppers with cheese.
Allow to continue baking until cheese melts.
Serve and enjoy!
