easy pumpkin soup easy pumpkin soup
Number of Servings: 6

Ingredients

    2 cup Pumpkin, canned, without salt (one 15-16 oz can)
    4 cup Vegetable Broth (one quart)
    2 cup Canned Tomatoes (one 15 oz can
    2 cup, chopped Carrots, raw
    .5 medium (2-1/2" dia) Onions, raw
    1 clove Garlic

Directions

saute diced onions, carrots, garlic. add rest of ingredients. cook. I used instant pot for 10 minutes with natural release. season w/ whatever you want. you can use just salt/pepper/herbs, add some curry ... whatever. if you want it a bit thicker, then take a tbs of cornstarch and mix w some water or soup and add in.
