Introduction

Ingredients

    2 medium (7" to 7-7/8" long) Banana, ripe
    1.5 cup Steel Cut Oats, Bob's Red Mill (quick cooking, organic)
    1.5 cup Bob's Red Mill Oat Flour
    .4 cup Molasses, Blackstrap
    1 tsp Baking Soda
    1 tsp Vanilla Extract
    .5 tbsp Extra Virgin Olive Oil to coat measuring cup before pouring in molasses
    .5 cup Chocolate Chips (vegan if desired)
    1/2 cup Sun Maid Golden Raisins

Directions

Place ingredients in a food processor, KitchenAid mixer or equivalent or mix by hand. I use a scoop to make 1.5 inch balls and then a moistened spatula to flatten them and bake 350 degrees for 10 to 12 minutes. The cookies freeze well. You can add a tablespoon of cocoa powder or lemon extract for extra flavor.
