    Seviroli Beef Tortellini, 8 serving
    *Summer Squash, 2 medium - peeled and sliced
    Red Ripe Tomatoes, 4 Italian tomato - chopped
    snap peas, .5 cup - chopped
    Peppers, sweet, red, raw, sliced, 1.5 cup
    Olive Oil, 1 tbsp
    1/2 tsp garlic salt
    1/2 tsp Italian seasoning


Put oil in a sauce pan, and heat on medium high heat.
Add Peppers and saute for 3 minutes
Add rest of ingrediants and cover - cook for 3 - 5 minutes - put sauce over cooked tortellini

    I made a slight change. I made my own whole wheat tortellinis and filled them with a mix of finely shredded eatable gourds and one egg folded together. - 5/7/09
