Number of Servings: 6

Ingredients

    4 sweet potato, boiled, peeled and diced.
    1 large onion (5.3 oz)
    2 cans of corn
    4 cups (or 2 large cans) of diced tomato
    2 cups zucchini, diced
    2 cups summer squash, diced
    2 Tbsp Fresh cilantro, chopped
    1 Tbsp Jamaican curry powder
    1 Tbsp Chili powder

    (for a spicier or more flavorful soup add more cilantro, curry, and chili according to taste)

Directions

Spray a large skillet or sauce pan with non-stick spray. Saute onion until carmelized. Add zucchini, squash, cilantro, curry and chili. Continue to saute until zucchini is soft. Add sweet potato, corn, tomato and broth. *Optional, add more spices to taste. Cover and simmer on low heat for 15 minutes.
