This is yummy served over any kind of cooked greens (kale, beet greens, colllards). This is yummy served over any kind of cooked greens (kale, beet greens, colllards).
Number of Servings: 4


    4 beets (2" dia, sphere)
    1 tbsp Olive Oil,
    1/2 cup, chopped red onions
    2 Tbsp Flour
    1 Cup Vegetable Stock
    1/2 Cup Soy Milk
    6 Tbsp Prepared Dijon Mustard
    1 1/2 Cup Tofu, firm


Trim the beets and place them in a roasting pan with 1/2 C water. Cover with aluminum foil and bake at 400 for 45 minutes.
When you can easily pierce with a fork, remove from the oven. Let them cool a bit so you can remove the peels. Chop into 1/2" pieces and set aside.

Heat the Olive oil in a medium sized sauce pan. Add the onions and cook until soft. Add the flour and cook for 2 more minutes, stirring constantly. Whisk in the milk, stock and mustard. Continue to cook until thick. Add the beets and tofu and cook until heated through.
