Introduction

Using the large Pampered Chef scoop, you get 20 or 21 nicely sized muffins. Using the large Pampered Chef scoop, you get 20 or 21 nicely sized muffins.
Number of Servings: 20

Ingredients

    2 bananas, mashed
    3/4 c sugar or sucanat
    2 eggs
    1/2 tsp vanilla
    2 c ww pastry flour
    1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 c olive oil
    2 tbsp milk
    1/2 c chopped nuts

Directions

Heat oven to 350*. Mix bananas, sugar and eggs; add vanilla. Add remaining ingredients and mix well. Line cupcake pan with paper baking cups and scoop in batter. Bake at 350* for 20 minutes or til a toothpick comes clean in center
Also makes 1 loaf of banana bread. Bake 1 hour at 350*, then 10 minutes at 300*.
