    2 c. liquid egg substitute
    1/2 c. flour
    1 t.sp baking powder
    1/4 tsp. salt (optional)
    1 lb. non-fat cottage cheese
    1 lb. shredded low-fat cheddar or swiss cheese
    1 tsp onion powder
    1/2 tsp. dry mustard
    1 tsp. dried tarragon
    1/8 tsp. ground white pepper
    1-10 oz pkg frozen chopped broccoli, thawed and drained well


Pre-heat oven to 400 degrees. In a large bowl, gradually mix flour into egg substitute with a wire whisk. Whisk in baking powder and salt. With a large spoon or spatula, mix in remaining ingredients. Spray a 13" X 9" pan (preferably glass or ceramic or nonstick) with butter flavored cooking spray. Pour into pan. Bake in lower half of oven at 400 degrees for 15 minutes then reduce heat to 350 degrees and bake for an additional 30 minutes. Let cool 10 minutes and cut into 8 pieces.
