Introduction

This fast and easy, high protein bean casserole (can be vegan by omitting dairy cheese or using vegan cheese) Mexican vegetarian main dish (can be eaten as a side too) is made of pantry items; 3 cans of beans, a cute little can of green chilies, a jar of salsa, a can of ro-tel tomatoes, some corn tortillas, and some cheese.

Layer it all together & bake.

Ingredients

    1.75-2 cup Beans, black (1 can)
    1.75 cup Old El Paso Refried Bean with Green Chiles (1can)
    1.75 cup Beans, Cannellini (white kidney) Eden Organic (1 can)
    1.25 cup RO TEL No Salt Added Diced Tomatoes & Green Chilies (1 can)
    42 tbsp Sauce - Pace Original Picante Sauce - Mild (1 jar)
    4 oz Green Chile Peppers, Diced (by ERMOTH) (1 can)
    10 tortilla, medium (approx 6" di Corn Tortillas
    1 cup Kraft Natural Cheese Mexican Style Cheddar Jack Finely Shredded

Tips

Serve with salad


Directions

Preheat oven to 375

1) Open all cans
2) In a tall square casserole dish, layer the tortillas, then the beans with ro-tel tomatoes and salsa and the cheese, reserving a little for the top.
3) Cover and Bake 20 min or until heated through; remove lid last few min to broil the top cheese.
