Introduction
This fast and easy, high protein bean casserole (can be vegan by omitting dairy cheese or using vegan cheese) Mexican vegetarian main dish (can be eaten as a side too) is made of pantry items; 3 cans of beans, a cute little can of green chilies, a jar of salsa, a can of ro-tel tomatoes, some corn tortillas, and some cheese.Layer it all together & bake. 1.75 cup Old El Paso Refried Bean with Green Chiles (1can)
1.75 cup Beans, Cannellini (white kidney) Eden Organic (1 can)
1.25 cup RO TEL No Salt Added Diced Tomatoes & Green Chilies (1 can)
42 tbsp Sauce - Pace Original Picante Sauce - Mild (1 jar)
4 oz Green Chile Peppers, Diced (by ERMOTH) (1 can)
10 tortilla, medium (approx 6" di Corn Tortillas
1 cup Kraft Natural Cheese Mexican Style Cheddar Jack Finely Shredded

Preheat oven to 375
1) Open all cans
2) In a tall square casserole dish, layer the tortillas, then the beans with ro-tel tomatoes and salsa and the cheese, reserving a little for the top.
3) Cover and Bake 20 min or until heated through; remove lid last few min to broil the top cheese.
