Ingredients

    Chop potatoes and add olive oil.Roast in oven set at 350 for 1/2 hour.
    2 chicken breasts
    3 peppercorns
    2 bay leaves
    sage,fresh
    bacon,optional,you can use Hormel 50% less fat.
    1/4 cup onion
    1 stalk celery
    1 clove garlic,minced
    a little low fat mayonaise (1/2 cup)
    1 tsp.paprika
    squirt of mustard
    salt and pepper sparingly,

Directions

Cook the chicken with peppercorns,bayleaf and sage for 15 to 20 min..at same time bake potatoes that have been diced.,with 2 to3 Tbl. of olive oil. Bake 350 for 1/2 hr.Cool.
Cut up chicken after it is done same size as potatoes. (don't use the peppercorns,bay leaves or fresh sage)Add remaining ingredients.I like to use low fat Miracle Whip even for a little extra zip. You can wrap this salad in Romaine leaves as shown on TV on the food channel.More paprika on top. Enjoy!
