Ingredients

    1 eggplant, peeled (yield from 1 Eggplant, fresh
    4 Tbspn Red Star, Nutritional Yeast, Vegetarian Support Formula
    4 tbsp Barbeque sauce, Sweet Baby Ray's Original

Directions

Slice unpeeled eggplant unto 1/4 in slices. lay on parchment on a cookie sheet, top with 1/2 teaspoon of barbecue sauce and sprinkle with nutritional yeast. Roast at 400 degrees for 10 min... flip add more sauce and nutritional yeast.. Roast for 5-10 more minutes until cooked through
