Introduction

This is faux Tuscan chicken because I substitute mushrooms in place of sun-dried tomatoes. This is faux Tuscan chicken because I substitute mushrooms in place of sun-dried tomatoes.
Number of Servings: 4

Ingredients

    6 ounces Chicken Breast (cooked), no skin, roasted
    1 cup, fluid (yields 2 cups whip Heavy Whipping Cream
    1 cup pieces Mushrooms, cooked
    1 cup Spinach, fresh
    2 clove Garlic
    2 tbsp Butter, salted


Directions

Melt butter in skillet. Season chicken the way you like... I use garlic salt, pepper and paprika. Cook 5 minutes on each side. Remove from skillet. Add heavy whipping cream and garlic and let simmer for 2-3 minutes to thicken. Add spinach and cook until wilted, about 3-5 minutes. Return chicken to pan and coat well. Cook 5-10 minutes until chicken is cooked completely. I serve with a salad.
