Ingredients

    36.29 Lemon Juice
    5.44 Garlic
    9.07 Water, tap
    0.73 cup, shelled Peanuts, boiled
    0.05 tbsp Guar Gum - Bob's Red Mill
    1 tsp 365 Everyday Value Organic Yellow Mustard

Tips

If you make the boiled raw peanuts ahead of time and freeze them (blended with lemon juice), the recipe is very fast to make.


Directions

(1) Soak raw peanuts without shells for 12 hours or more (they start sprouting near 24 hours of soaking if you want to use sprouted peanuts).
(2) Boil the raw peanuts. This can take a couple of hours or more depending upon how green your peanuts are. Check the done-ness every hour or so
(3) Drain the peanuts. Process the peanuts into a fine paste in a blender. You may want to add the lemon juice and water to make the blending easier. (NOTE that you can freeze boiled peanuts by blending them into a fine paste with lemon juice. The lemon juice is a ROS scavenger and should help prevent oxidation of the peanuts.)
(4) blend in the remaining ingredients. The small amount of water in the recipe is what I had to add to make a lighter creamier texture.


Serving Size: 2 Tablespoons is 25 g. makes approx 10 servings
