Ingredients

    1 cup, chopped Onions, raw
    2 cup (8 fl oz) Yogurt, plain, low fat
    1.5 cup Spinach, cooked
    2.25 cup Cheese - Kraft Mozzerella Shredded
    1.5 serving Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
    2.5 tbsp Parmesan Cheese, grated
    5 cup Spaghetti Squash
    2 clove Garlic
    1 tbsp Extra Virgin Olive Oil

Tips

Season with basil, cumin, or salt and pepper as desired.


Directions

Bake or microwave whole squash until done. Cook onion and garlic in oil until softened, add spinach and tomatoes. Heat for several minutes, then remove from heat and scoop spaghetti squash strands in, toss to coat. Stir in yogurt, half the mozzarella and half the Parmesan. Transfer to 2-3 quart baking dish, sprinkle with remaining cheese and bake 15-20 minutes at 400 degrees.
