Ingredients

    1 clove Garlic
    0.50 large Onions, raw
    0.50 serving Brown rice (1 cup cooked)
    16 oz 80/20 ground beef chuck
    2 cup Borden Four Cheese Mexican Shredded Cheese
    5 Wrap La Banderita Whole Wheat Wraps
    1.13 Cups Old El Paso Red Enchilada Sauce, mild
    6 tsp Old El Paso Taco Seas. mix (25% less sodium)
    16 tbsp Pace Chunky Salsa, mild
    1.63 cup Kidney Beans, canned, average all brands
    1.63 cup Yellow Sweet Corn, Whole kernal, canned, drained

Tips

Serve over shredded lettuce and diced tomatoes wih sour cream and or guacamole.


Directions

Brown ground beef with onions and garlic. Add taco seasoning and 1/4 cup water mix and cook until thickened. Add corn, stirover heat for 1 to 2 minutes remove form heat. Add Salsa, 3/4 can of enchilada sauce, rice, and beans, mix well.

Grease a ten-inch dutch over and place one wrap in bottom. Spoon meat mixture, about 11/2 to 2 cups, over wrap, sprinkle with shredded cheese, add annother wrap and repeat until all meat mixture is used and finish with just a wrap on the top. Pour remaining enchilada sauce over top wrap and bake for 30 to 35 minutes at 350 degrees in a covered dutch oven.

After 30 to 35 minutes, remove cover, add remining cheese and return to oven, uncovered until cheese is melted, bubbly, and slightly browned.
