Ingredients

    1/2 c packed light brown sugar
    1/2 c low-fat buttermilk
    1/4 c fat-free egg substitute
    3 T canola oil
    3/4 c all- purpose flour
    1/2 c whole-wheat flour
    3/4 c ground flaxseed
    1 t baking powder
    1 t baking soda
    1/8 t salt
    1 c pureed banana

Directions

Preheat oven to 350 degrees. Coat a nonstick 8 x 4-inch loaf pan with cooking spray.

In a large bowl, combine the sugar, buttermilk, egg substitute. and oil. Whisk until smooth.

In a medium bowl, combine the allpurpose flour, whole-wheat flour, flaxseed, baking powder, baking soda, and salt. Whisk to mix.

Add the dry ingredients to the liquid ingredients and stir just until blended, do not over mix. Add the bananas and stir to mix.

Pour into the prepared pan and bake for 40-50 minutes or until a knife inserted in the middle comes out clean. Remove the pan to a wire rack and let cool for a few minutes. While still slightly warm, turn out of the pan.

Makes 10 servings.
