Ingredients

    1 cup, mashed Pumpkin, cooked
    .25 cup Coconut Oil
    .33 cup Honey
    2 large Egg, fresh, whole, raw
    1 cup Whole Wheat Flour
    0.75 cup King Arthur 100% Unbleached White Whole Wheat Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    1 tsp Cinnamon, ground
    .25 tsp Nutmeg, ground
    .33 cup (8 fl oz) Water, tap
    .25 cup, hulled Sunflower Seeds, without salt
    .25 cup Pumpkin Seeds (whole seeds, roasted)
    .25 cup, packed Raisins

Tips

Optional additions are seeds and raisins


Directions

Preheat oven to 350F
Oil muffin tins
Beat melted coconut oil & honey together, add eggs & mix well.
Combine dry ingredients in another bowl.
Add dry ingredients & water to honey mixture
Mix in pumpkin, seeds & raisins
Spoon batter into tins
Bake 20 to 25 minutes
