    1 3/4 c. flour (1 cup white, .5 cup oat flour, .25 cup wheat flour)
    1 c. unsweetened applesauce
    1 1/2 tsp. baking soda
    1/2 tsp. salt
    1 1/2 cups splenda
    1 1/2 c. pureed cooked fresh beets
    6 tbsp. carob or chocolate
    1 tsp. vanilla


Mix flour, soda, salt and set aside. Combine sugar (or splenda), egg whites, oil (or fruit puree) in mixing bowl. Beat in beets, chocolate and vanilla.
Gradually add dry ingredients, beating well. Bake at 350 degrees for 25 minutes.

This is an excellent cake. Healthy too. Very moist.
