Ingredients

4 skinless boneless chicken breasts
1 tsp cayenne pepper
1/2 tsp salt
1/2 tsp pepper
2 tablespoons olive oil
1 medium red onion, finely chopped
2 tablespoons lime juice
1 Haas avocado, pitted and cut into chunks
salt and pepper to taste
Directions
Combine onion and lime juice in a medium bowl and set aside.
Combine the cayenne, salt and pepper in a small bowl and then rub on both sides of the chicken breasts. Heat a large non-stick skillet over medium heat and swirl with olive oil. Add chicken and cook, turning once, until browned, about 8-10 minutes per side.
Meanwhile, add avocado to onion mixture, folding in gently. Season with salt and pepper to taste. To serve, plate chicken and top with salsa. One serving equals one chicken breast and 1/4 of the salsa.
