Introduction

I love Mexican food but there is the salt issue. Canned enchilada sauce has a gazillion mg. of sodium. So I use a corn tortilla (taste better to me) and just 3 tbs. of canned sauce. I now have a recipe for the sauce. Will make a new recipe then. This is good in a pinch. I love Mexican food but there is the salt issue. Canned enchilada sauce has a gazillion mg. of sodium. Ingredients

    1 Corn Tortilla
    3 oz Turkey, Ground turkey, 93% lean
    3 tbsp Ortega Enchilada Sauce
    1/8 cup GV Colby and Monterey Jack Shredded Cheese

Directions

Brown turkey.Drain if needed. Add half of cheese and 1 TBS sauce. Spoon meat mixture into tortilla. Top with remaining sauce. Bake in a greased pan about ten minutes, until heated through. I made this only for one tortilla because I only eat one of these. Sometimes it is easier to just make one instead of a lot and having the issue of freezing and saving.
