Introduction

This is my husband's recipe and is loaded with flavor! Warning: If you're a wimp like me, this has a definite KICK! It's also a very economical meal. We used dried beans and ground chuck and it was still healthy!

It's great with shredded cheese and sour cream on top!

Ingredients

    1 lb dried black beans, prepared according to the package directions
    Cooking water from beans
    1 lb ground beef
    1 large sweet onion, chopped
    2 cloves garlic, minced
    2 tbsp cumin
    1 tbsp chili powder
    1/2 tsp cayenne pepper
    2 tsp salt
    2 tsp black pepper
    2 tsp onion powder

Directions

Prepare the dried beans according to package directions. Do NOT drain the beans when they are finished cooking. The beans will stay in the cooking water.

Brown the ground beef. (Tip: To save a few dollars, purchase ground chuck or hamburger meat. Brown until no longer pink. Drain the grease. Place meat in a colander and rinse with hot water. This lowers the calories and fat in the meat.)

Over medium low heat, add ground beef to beans and water. Stir. Add onions and garlic. Add all seasonings and spices. Stir.

Cook for 2-3 hours until you get a nice thick chili. (Note: You can also put this in your slow cooker on low for about 4 hours.)
