Ingredients

1kg Grams Ground beef
100g of smoked ham or bacon
1 red or green capsicum
1.0 cup, cubes Eggplant, fresh
5.0 serving spring onions-1 medium (15g)
1.0 cup, sliced Zucchini
2 x 250 ml jars dolmio pasta sauce
2 tblspns virgin olive oil
1 pkt spaghetti
Salad
1/2 cup crumbled Fetta cheese
1/2 cup olives
1/2 dozen Cos lettuce leaves
1 cup Cherry tomatoes
1/2 cup Celery
Dressing
1 cup fresh basil
1 cup fresh parsley
1 tblspn virgin olive oil
1 tblspns wine vinegar
1 clove garlic
Directions
Wash all veggies. Chop all fresh veggies into cubes. Chop bacon or ham, set aside on a separate plate.
Heat oil in a heavy base pot/saucepan. Add veggies. Cook until tender.Transfer onto plate and set aside.
Add mince and ham/bacon to pot, brown. Add 2 jars of pasta sauce, heat through, add cooked veggies and simmer for 1 hour without lid.
Cook pasta according to packet instruction.
While the pasta is cooking:
Wash salad veggies .Break up cos lettuce. Slice tomatoes in half. Dice celery, toss.
Pulse herbs in a blender. Add oil, vinegar, crushed garlic and pulse.
Olives and crumbled fetta in separate bowls on the side. Dressing in a jar with tsp to sprinkle over salad.
