Ingredients

1 cup Ground Flax Seed Meal (94 grams)
1 cup Almond Flour
2 tbsp Coconut Flour
1 tbsp Baking Powder
1 tsp Cinnamon, ground
1-1/2 tsp Nutmeg, ground
1/2 tsp Cardamom, ground
1/4 tsp Salt
1/4 cup Truvia (or other sweetener equivalent upto 1/2 cup sugar or less)
1/2 cup melted Butter, unsalted (4 oz)
4 large Eggs
1/2 cup Water
1 medium (2-3/4" dia) chopped Apple
Directions
Preheat oven to 350 - Line a 12-cup muffin tin with paper liners.
In a large bowl mix together the flax meal, almond flour, coconut flour, baking powder, spices, and sweetener. In a smaller bowl beat together the eggs, melted butter, and water. Pour wet mixture into dry and mix well. Stir the chopped apple.
Fill the muffin tin with the batter and bake at 350 for 25 minutes or until a toothpick into the center of the muffin comes out clean.
Serving Size: Makes 12 muffins - 1 serving is one muffin
