Number of Servings: 4

Ingredients

    4 medium firm-flesh potatoes, cut into large chunks
    6-8 leaves of basil, roughly chopped
    3 tbs extra virgin olive oil
    salt to taste

Directions

Boil the potatoes until they are tender, but not too soft, about 15 minutes depending on how large you cut them.
Drain when they are easily pierced with a fork.
Toss with olive oil, basil and salt.
Add pepper if you want a little bite.
Makes approximately 4 1.5 cup servings.
