Introduction

Ingredients

    3 tbsp Butter, Salted
    1/2 c Flour, unbleached all-purpose
    1/2 C Bob's Red Mill Organic Polenta - Corn Grits
    2 T unpacked Brown Sugar
    1 tsp Baking Powder
    1/4 tsp Baking Soda
    1/4 tsp Kosher Salt
    1/2 C creamed corn
    2 T Buttermilk, dried
    4 oz Water
    1 large Egg, fresh, whole, raw

Directions

1. Pre-heat oven to 400 F -- Position Skillet on middle rack to heat up. Add butter about half way during heating cycle.
2. In large bowl, whisk together flour, cornmeal, sugar, bp, soda, & salt.
3. Make well in centre, add buttermilk, egg & creamed corn -- Mix together.
4. Using oven mitts, remove buttered HOT skillet -- Pour batter into skillet-it will sizzle!
5 Bake until cornbread is brown on top(about 20-22 min). Allow to cool 5 minutes - slice - serve.
