    4 small zucchini--sliced
    1 eggplant--sliced
    1 cup soymilk
    1 egg beaten
    1 cup breadcrumbs
    salt and pepper to taste
    2 tsp minced garlic


Slice veggies and set aside
mix all other ingredients except bread crumbs in a bowl
dip veggie slices in milk mixture then in breadcrums and put on baking sheet.

bake at 350 for 30 min
