    1 1/2# (6 C.) zucchini, scrubbed halved lengthwise and cut in thin slices

    1/2 # lean ground sirloin
    1 C. chopped onion
    1/2 tsp. garlic powder
    1/2 tsp. each: cinnamon, oregano, salt
    1 C. water
    1 tsp. Wyler's sodium free instant chicken boullion
    2/3 C. uncooked white rice
    10 oz. box frozen spinach
    1- 8oz. can no salt added tomato sauce
    2 T. margarine
    1/4 C. all-purpose flour
    1 1/2 C. skim milk
    2 large eggs, beaten
    1/4 tsp. salt
    1/8 tsp. nutmeg
    1/4 C. parmesan cheese


Can be made through step 4 up to 1 day ahead, covered and refrigerated. Add an extra 20 to 25 minutes baking time.

1. Lightly spray grease a 9 by 13 inch baking pan. Preheat oven to 350 degrees.

2. Cook zucchini in a large covered non-stick skillet until tender crisp. Remove from pan.

3. Prepare filling by adding ground beef, onion and garlic to non-stick skillet. Cook, breaking up meat with spatula until no longer pink. Drain if needed. Stir in remaining filling ingredients. Cover and simmer 10 minutes, stirring 2 or 3 times as spinach thaws. Remove from heat.

4. Topping: Melt margarine in a 2-qt saucepan. Whisk in flour and cook, stirring 1 to 2 minutes without letting mixture brown. Gradually whisk in milk. Cook, whisking constantly 4 to 5 minutes until thickened and smooth. Whisk about 1/3 of the hot mixture into beaten eggs, then whisk egg mixture into remaining sauce. Remove from heat.
5. To assemble: Cover bottom of prepared 9 by 13 sprayed baking dish with half of the zucchini slices. Spoon on all he filling, then cover with remaining zucchini. Pour on topping and sprinkle with parmesan cheese.

6. Bake at 350 degrees 20-25 minutes or until hot and bubbly and top is lightly golden.

Makes 6 hefty delicious portions.
