    2 Lg. peeled Garlic Cloves
    1 c. halved cherry tomatoes
    2 1/2 cups low sodium chicken broth
    8 oz. uncooked whole wheat penne pasta
    1 c. small broccoli florets
    1 medium carrots, peeled
    2 oz. reduced fat cream cheese
    9 oz. chicken breast
    Dash salt
    1/4 tsp. black pepper


Grill chicken breast, set aside.

Thinly slice garlic. Place garlic in hot stock pot sprayed with non-stick spray. Cook over medium heat 2-3 minutes or until garlic is golden brown, stirring occasionally. Remove from heat; add broth. Return to burner; increase heat to high. Cover and bring to a boil. Stir in pasta; cover and simmer vigourosly 8-10 minutes or until pata is almost cooked but still firm, stirring occasionally.

Meanwhile, cut broccoli in to small florets; place in bowl. Cut carrots in half lengthwise; thinly slice crosswise on a bias. Cut cherry tomatoes in half or quarters. Add carrots and tomatoes to bowl.

Cut cream cheese into cubes. Add veggies, cream cheese, salt and pepper to stock pot. Stir until cream cheese is melted and fully incorporated. Reduce heat to medium; cover and cook an additional 2-4 minutes or until vegetables are tender. Serve immediately.

Makes 6 - 1 c. servings

Top with parmesan cheese, if desired.

    Not bad, but I was kinda dissapointed. I guess I was looking for more depth of flavor. Probably won't make again. - 10/26/08
