Introduction

I made this soup in my crock pot, but you can easily make it on the stovetop. It's a very satisfying healthy low-fat and low-sodium soup that is high in protein. Number of Servings: 8

Ingredients

    Chicken Breast, split, skinless, boneless, 1 lb.
    Celery, 5 stalks, cut in 1/2" pieces
    Onion, large, red, cut in 1/2" pieces
    Carrots, baby, 1 pound, cut in 2 or 3 pieces each
    Chicken broth, organic, low sodium, 32 oz (1 box)
    Lite Salt, 1/2 tsp
    Black Pepper, 1 tsp
    McCormick Salt Free All-Purpose Seasoning, 1 tsp (or just add your own seasonings - this one has onion, parsley, basil, oregano, thyme, red pepper, garlic, lemon peel, celery, and paprika)
    Shirataki Tofu Noodles, 3 8oz pkgs (I bought the fettuccini noodles)

Directions

Makes eight 2-cup servings. (To make four 2-cup servings, divide recipe ingredients in half.)

CROCK POT DIRECTIONS:
1. Put vegetables in bottom of crock pot.
2. Put chicken breasts on top of vegetables.
3. Add seasonings.
4. Add broth.
5. Cook on low 4 hours, or high 2 hours.
6. Remove chicken breasts and cut into 1/2" pieces.
7. Return chicken to crock pot.
8. Drain shirataki noodles and add to crock pot.
9. Cook on low another 10 minutes for noodles to heat through.

STOVETOP DIRECTIONS:
1. Put vegetables and chicken breasts in large pot.
2. Add seasonings.
3. Add broth.
4. Bring to a boil.
5. Reduce heat, and simmer for 1 hour.
6. Remove chicken breasts and cut into 1/2" pieces.
7. Return chicken to pot.
8. Drain shirataki noodles and add to pot.
9. Cook on low another 10 minutes for noodles to heat through.

Add ins and substitutions: Shirataki noodles are made from tofu. You can easily substitute regular or whole grain noodles, brown rice, or wild rice in this recipe. For added fiber, add some no-salt-added pinto beans or black beans. (Adjust nutritional content if making substitutions or adding ingredients.)

I freeze leftovers in individual serving bowls.
