Number of Servings: 24


    3/4 c. egg whites
    2 c. sugar
    1 c. unsweetned applesauce
    2 c. grated zucchini
    1 Tbsp. vanilla
    2.5 c. whole wheat flour
    .5 c. soy flour
    1 tsp. salt
    1 tsp. baking soda
    1/4 tsp. baking power
    1 Tbsp. cinnamon


Preheat oven to 350 degrees. Prepare 2 loaf pans or 24 muffin tins with cooking spray and set aside. Beat egg whites until foamy (not firm). Add sugar and applesauce and mix to blend. Stir in grated zucchini and vanilla. Add dry ingredients and stir until well mixed. OPTION: you can add 1 c. chopped nuts, but you will have to adjust the nutritional information.

When thoroughly mixed, spoon batter into muffin tins. I used a 1/4 cup measure about 3/4 full. You'll just have to "eyeball" to ensure equal amounts if using muffin tins. Or you can use 2 loaf pans. Bake 30 minutes, or until toothpick comes out clean.

These freeze well. The recipe as written serves 24 and is 2 Flex Points on Weight Watchers plan.

NOTE: I am not sure how Splenda would work in this recipe, but I may substitute for the sugar next time to reduce the calories further. Sometimes baked goods don't rise as well with sugar substitutes.
