I love this recipe. I prefer to not eat white flour so this is a great alternative from regular pizza. I love this recipe. I prefer to not eat white flour so this is a great alternative from regular pizza.
Number of Servings: 8

    3 cups Brown Rice
    2 large Eggs
    1 cup Cheddar Cheese

    1 can Hunt's Tomato Sauce
    2 tsp Garlic
    2 tsp Itialian Seasoning
    1/2 tsp Black Pepper

    4 Tablespoon Parmesan Cheese
    1 Pkg Canadian Bacon
    1 can Pineapple tidbits
    2 cups Mozarella Cheese

I couldn't get these two in the ingredients, 2 tsp Italian Seasoning, &1/2 tsp black pepper, they will go in later.

Cook rice. It takes me 35 mins to cook my rice in the rice cooker, so I'm going to include this time in with the cooking time.

Open & drain pineapple, I just let it drain until I'm ready for it.

Mix rice, egg & chedder cheese. Spread out & press into 2 glass pie dishes. I don't spray, it won't stick.
BAKE 400 degrees for 10 - 15 minutes.

While this is cooking, mix one 8 oz can of tomato sauce, garlic, 2 tsp Italian Seasoning, &1/2 tsp black pepper.

Grate the Mozarella Cheese, then it is ready.

After the crust is cooked, I leave on stove & put toppings on. Evenly spread the tomato sauce mixture on the crusts. Sprinkle the
Parmesan Cheese on. My bacon is big, I cut mine in 4th's then spread all over pizza. Put the pineapple on & then top with the Mozarella Cheese.

Bake at 400 degrees for another 10- 15 mins

I divide into 1/4's, put in Rubermaid containers, throw in freezer & take on to work everyday!

  • This sounds yummy! (I love hawaiian, but bet other pizza toppings would be good as well!). I'll have to try it some time! - 9/21/08
