Ingredients

1 1/4 cup King Arthur 100% Unbleached White Whole Wheat Flour
1/5 cup Granulated Sugar
5 tbsp *Flax Seed Meal (ground flax)
1 tsp Baking Powder
1/4 tsp Salt
2 cup (1 serving) Kellogg's All-Bran Cereal
1 1/4 cup Milk, 1%
3 tbsp All Whites 100% Liquid Egg Whites 3Tbsp= 1 large egg
1/4 cup Apple Sauce (Motts) Unsweetened
2 serving Blueberries Dried Kirkland/Costco
Directions
1. Stir together flour, sugar, flax seed, baking powder and salt. set aside.
2. In large mixing bowl, combine All-Bran cereal and mild. Let stand about 2 minutes or until cereal softens. Add egg and apple sauce. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with coking spray.
3. Bake at 4oo*F about 20 minutes or until golden brown. Cool 10 minutes. Serve warm.
Option: may substitute raisins or cherries, may add cinnamon to flour mixture or use cinnamon applesauce.
