Introduction

I wanted to develop a waffle recipe that had a good amount of protein, is filling and tastes good. Serve this with fresh fruit and a dollop of Rediwhip and you have an amazing meal albeit, more of a Bruch as it's not really lo cal for one! I wanted to develop a waffle recipe that had a good amount of protein, is filling and tastes good. Number of Servings: 1

Ingredients

    2 large Egg, fresh, whole, raw
    2 tsp Granulated Sugar
    1 tsp Butter
    1 tsp Vanilla Extract
    1/3 cup Unbleached White Whole Wheat Flour
    Dash Kosher Salt
    1/2 cup (4 oz ) Unsweetened Flax milk or other milk
    1 tsp Half and Half Cream or other fat like butter or veg oil.
    1/4 Baking Powder

Tips

You get all four waffles in this recipe or you can share and only have 200 calories waffles!


Directions

Place all ingredients in your blender. I use a nutribullet.
Blend well for about 30-50 seconds.
Pour into one cup size waffle iron.
Cook until desired browning.
Serve with fresh fruit, flavored yogurt, syrup or your desired toppings.

An alternative to waffle iron is below:
Preheat oven to 400 degrees.
Place about a tsp of butter in the pan and place it in the oven. Using hot pad, remove the pan and swirl the butter around bottom of pan. Add all the batter.
Bake for 25 or so munutes until puffed an golden.
If you don't have a waffle iron you can make a pancake puff in the oven. This is great served with flavored yogurt with fresh seasonal berries and bananas in the middle of the Puff!
