Ingredients

    1 cup flour
    1 TBS baking powder
    1/2 cup unsweetened apple sauce
    3/4 cup water
    6 cups fresh or frozen fruit
    1/3 c Spenda or other non-calorie sweetener
    1 pkg (3 oz) sugar free genatin, any flavor

Directions

Prepare fruit, pealing, chopping or slicing as appropriate depending on the type of fruit you use.

Combine flour, baking powder, apple sauce, and water. Whisk until batter is smooth. Batter should be thick but still pourable.

Spray an 8X8" glass baking dish with baking spray. Pour in just enough batter to barely cover the bottom. Spoon fruit into baking dish and then sprinkle fruit with gelatin mix and Spenda. Cover fruit with remaining batter.

Place baking dish on a cookie sheet and bake in 350 degree pre-heated oven for about 40 minutes or until batter is golden and fruit is bubbly.
