Introduction

A great mid-morning snack that will keep you filled until lunch time. Perfect for when you only have one banana leftover! A great mid-morning snack that will keep you filled until lunch time. Perfect for when you only have one banana leftover!
Number of Servings: 6

Ingredients

    1 banana
    1 scoop Vega Protein Powder, Vanilla
    1/2 cup all purpose flower
    1 egg
    3 tbsp vegetable oil
    1 tsp vanilla extract
    1/4 tsp salt
    1/4 tsp baking soda
    1/2 cup granulated sugar (can also use coconut sugar!)
    2 tbsp nutella

Tips

You can use whatever protein you prefer, and you can substitute Nutella for chocolate chips if there is a nut allergy.


Directions

In a medium sized mixing bowl, mash the banana. Then stir in the egg, vanilla extract, nutella and oil until combined. Then add all at once the flour, protein powder, sugars, baking soda, and salt. Fold until combined.

Fill into prepared (oiled or lined with parchment) medium-sized muffin tray and bake at 325°F for 18-20 minutes.

Serving Size: makes 6 muffins
