    4c zucchini, thinly sliced
    1c chopped onion
    1/4 c water
    2 tsp salt and pepper
    1/4 tsp garlic powder, basil and oregano
    2 eggs beaten
    8oz shredded mozzarella cheese
    8 oz small can tomato sauce (or spaghetti sauce)


saute zucchini, onion an 1/4 cup water in skillet for 10 min
drain well
combine eggs, cheese, parsley and spices
stir in zucchini mixture
place in 10" pie pan sprayed w/ cooking spray
spread top with layer of tomato sauce
bake in preheated oven 375 for 20-30 min

  • Looks interesting and I'll save and print - but the salt will have to be reduced and I'll try with reduced fat cheese as well. I like the fact that there is no pie crust in this "pie". - 8/7/08
