Introduction

Potato salad with pizazz and not all the calories. Great for picnics because there is no mayo!!! Potato salad with pizazz and not all the calories. Great for picnics because there is no mayo!!!
Number of Servings: 4

Ingredients

    18 oz russet potato, cubed (approx. 4 cups)
    3T dijon mustard
    1T curry powder
    3T sweet relish
    1 large egg, diced
    1/2 cup red onion, diced
    salt and pepper to taste

Directions

Makes 4 - 1C servings

Boil cubed potatoes until tender (about 10 minutes) When the potatoes are tender drain and season with salt and pepper. Let cool slightly. In a small bowl combine mustard, curry powder, relish, egg, onion. Fold the mustard mixture with into the potatoes. Refridgerate for at least 1 hours before serving.
