They're not fried or French... They're not fried or French...

Ingredients

    Baked Potato, with skin, 2 medium (2-1/4" to 3-1/4" dia.)
    Olive Oil, 1 1/2 tbsp
    Salt & Pepper to Taste
    Marjoram, Oregano, Rosemary, or any other herbs you may like

Directions

Wash the potato skin.
Slice or cut the potato into long wedges, chinks or crinkles.
Place cut potatoes into a large bowl. Pour in oil and spices. Mix well.
Spread into non-stick baking pan and bake at 350 until done.

    I'm a big mashed potato hound, only problem is that I also add butter, milk, and mayo. This recipe let me eat potatoes without all the other fattening things and it didn't take long to cook. I really liked the potatoes this way. Thanks - 10/26/08
