Ingredients

    16 oz 80/20 ground beef chuck
    114 grams Zucchini
    1 tbsp Ortega taco seasoning mix
    90 grams Onions, raw
    283 grams Rotel Diced Tomatoes and Green Chilies (mild) (by WANT2BEFIT10)
    77 grams uncle bens flavor infusions garlic & butter (by KITTYMOCHELLE)
    2 tbsp simple truth organic tomato paste (by AZQUEEN)
    1 tbsp Paprika

Tips

can use Uncle Bens spanish style rice instead


Directions

brown beef in sauce pan, remove and rest
fry chopped onions in same pan until translucent
add chopped zucchini and cook for 3 mins
return browned beef to pan and add taco seasoning.
add paprika (smoked is best if you can get it)
add can of Rotes as well as dry rice
add 1.5 cups of water and simmer on med heat for 8-10 mins until rice is almost cooked.

Serving Size: makes 6, 1 cup servings
