Ingredients

    2 lbs boneless, skinless chicken breast, cut in 1 inch pieces cooked
    1 lb Bacon, cut in 1 inch pieces cooked
    4 oz Cream Cheese, softened
    .5 cup Sour Cream
    1 cup Gouda Cheese, shredded
    1 cup Gruyere Cheese, shredded
    1/2 cup Green Onion, chopped
    1 cup, shredded Cheddar Cheese
    1 head Cauliflower, (about 6 inches dia. cut in 1 inch pieces)
    1 tsp Salt
    1 tsp Pepper, black
    3 tsp Garlic

Directions

Prep all of your ingredients - grate cheeses, chop onion and cauliflower, cook bacon and chicken. Place cauliflower in a large bowl and micowave until softened, about 5-8 minutes. Mix sour cream, cream cheese, 3/4 of the bacon, 3/4 of the green onion, gouda, gruyere, salt, pepper, garlic, and cauliflower. Mix hot chicken into the cauliflower mixture. Place in a 9 x 13 baking pan. Bake at 350 degrees until cauliflower is as soft as you prefer, about 45 minutes. Top with cheddar cheese and remaining bacon. Change oven to broil on low. Broil for about 5 minutes to brown the top. Top with remaining green onions before serving.
