Number of Servings: 2


    1/2 a cup of Egg Beaters
    1/2 a cup of 1% milk
    1 tbsp of canola oil

    1/2 a sliced Zucchini
    1/2 a chopped Red Pepper
    1 Shallot chopped and diced
    4 thin slices of cooked turkey breast meat, chopped.


Makes 2 servings.

Prepare the vegetables on a plate and mix together.

Heat a frying pan on a high setting, adding the canola oil.
Beat the egg beaters and milk together in a jug or bowl.
When the frying pan is hot enough, add the egg mix. As it cooks, roll the mixture around the sides to make sure it reaches the pan.
After about a minute, add the veggies and turkey breast and stir. Add soy sauce if you wish.

Keep stirring, making sure all the egg mix is thoroughly cooked. Fry for about 5 mins or until done.

Turn off heat and serve.
