    2 c red or white quinoa (dry)
    1 can of black beans, rinsed and drained
    3 ears corn (or about a cup of frozen corn)
    1 red bell pepper, diced
    1 bunch scallions, diced
    3 Tbsp balsamic vinaigrette salad dressing
    1 Tbsp lemon juice
    salt & pepper to taste
    Fresh herbs (oregano, basil) if desired


Cook quinoa according to package directions and cool.

Blanch corn; if using whole ears, slice kernels away from cobs.

Mix all ingredients in large bowl & season to taste. Garnish with fresh herbs if desired.

This is a very flexible recipe and you can alter the amounts of various vegetables and seasonings to suit your taste. Works well as a side or as a vegetarian main dish. You could also add cold chicken or shrimp or some feta cheese.
