Ingredients

    1 Lb of cubed pork, fat removed
    1/2 c onions, sliced
    1 c peppers sliced
    1 10.5oz can of beef consomme, with 1 can of water
    2 c of instant brown rice (boiling bag rice can be used just open 2 bags and pour into dish)

Directions

slice vegetables and saute in Parkay butter spray / Pam cooking spray; cut cubed pork into 4 servings (4 oz each) season and add to vegetables; brown on both sides then remove; add consomme and water to vegetables; bring to a boil; Place uncooked rice in a 2 Qt greased casserole dish; lay pork on top of rice ; add vegetables and consomme; Cover and cook for 30 minutes on 375. Rice should be moist and tender and juice should be absorbed.
Serve hot with steamed vegetables .

    Very Good
    This was great. I added a bag of frozen stir fried vegetables instead of the peppers and a little Chachere's Jalapeno seasoning. I will definitely make this again. - 4/21/10
