    2 tbsp. Olive Oil
    2-3 cloves of crushed Garlic
    1/2 Cup chopped onion
    2 1/2 Chicken breasts
    3 cups cooked whole wheat pasta
    1 Large Celery Stalk, chopped
    1/2 Medium Size Green Pepper, chopped
    1/2 Cup zucchini, chopped
    1/2 Cup summer squash, chopped
    1 cup fresh broccoli, chopped
    1 cup fresh spinach
    2 small tomatoes, chopped
    1 Cup Kraft Light Balsamic Vinaigrette


Coat large saute pan with olive oil and add 1/4 chopped onion, garlic cloves, and chicken breasts. Cover and cook.

When chicken is cooked through, remove and cut up into bite size pieces. Add the rest of the 'hard' veggies to saute pan and cover and cook for 5-7 minutes. Except for the tomatoes add the rest of the veggies to cook for an additional 5 minutes.

Toss the cooked veggies, tomatoes, pasta, and chicken in a large serving bowl and add vinaigrette to taste.

Serve with a little parmesan cheese if desired.

Makes 6-8 servings. (My kids LOVE this one!)
