Introduction

Low fat, high fiber and really tasty! Low fat, high fiber and really tasty!
Number of Servings: 48

Ingredients

    1 cup unsweetened applesauce
    2 ripe bananas, beaten
    8 fresh or soaked dried dates,
    1 teaspoon vanilla
    1 to 1 1/2 cup whole-wheat flour
    ¼ C. ground flaxseeds (Best to grind flax seed just prior to using fo retain full nutritional benefit.)
    ¼ C. wheat germ
    1 teaspoon baking soda
    1 teaspoon cinnamon
    3 cups oatmeal
    1 cup dried fruit, chopped to the size of a raisin (raisins, cranberries, apricots, etc)
    1 cup chopped nuts and/or seeds – walnuts, pecans, hazelnuts (toast nuts for a few minutes to increase flavor), pumpkin seeds, etc

Directions

Preheat oven to 350 degrees.

In a food processor, beat together applesauce, bananas and dates until creamy. Add vanilla. Beat well.

Add 1-Cup flour, flaxseed meal, wheat germ, baking soda, and cinnamon. Mix well. If batter is too moist, add remaining ½ C. flour to get a moist but not too moist batter. Stir in oats, dried fruit and nuts. Drop by rounded tablespoonfuls onto ungreased cookie sheet.

Bake 10 to 12 minutes or until golden brown.

Cool 1 minute on cookie sheet then remove to wire rack.

Makes 4 dozen cookies.
