Number of Servings: 8


    1.5 Cups of Oatmeal
    .5 cups of Cocoa
    1 teapspoon of Baking Soda
    1.5 teaspoons of Baking Powder
    8 egg whites
    1.5 cup of Brown Sugar
    1.5 cups of fat-free vanilla yogurt
    1 Tablespoon of vanilla extract

    1/4 cup of water
    1/4 cup of unsweetened cocoa
    .5 cup of sugar twin
    1 tsp. vanilla


1.) Preheat the oven to 350
2.) Blend oatmeal.
3.) Combine oatmeal, cocoa, baking soda, and baking powder in a mixing bowl.
4.) In a second bowl, combine egg whites, sugar twin, yogurt, and vanilla. Mix until smooth.
5.) Mix in the dry ingredients into the second bowl.
6.) Spray an 8 in. pan with cooking spray.
7.) Pour mixture into pan and cook for about 30 minutes. Or until done.

Mix all the ingredients and let sit in the fridge until it thickens. Then spread over the cake.

  • It says sugar-free, but it calls for 1.5 cups of brown sugar. Isn't that sugar? Did you mean Splenda Brown Sugar or another substitute maybe? - 1/22/10

  • I dunno.. I tried this and it was the worst thing I have ever tried.. Sorry to say this. My daughter wouldn't eat it either.. I ended up having to throw it away..
    I followed the directions to a 100%..
    Didn't turn out well at any direction.

  • I added Splenda White sugar to the icing and it thickened up and still sugar free! I also added 1 tsp of I can't Believe it's not Butter fat free. Only adds 4 calories per serving.

  • This was incredibly good, it needs a sweet frosting like the one above but I'm going to try something thicket next time. worked great as cupcakes. - 8/10/08
