Ingredients

    0.5 tbsp Butter, unsalted
    0.5 tbsp Olive Oil
    3 cup, sliced Zucchini
    226 grams Mushrooms, fresh
    0.5 cup, chopped Onions, raw
    4 fl oz White Wine
    1.8 cup Hunt's Diced Tomatoes
    2 oz Cream Cheese
    1 clove Garlic
    1 tsp Italian Seasoning
    1/4 c chopped fresh basil

Directions

Heat skitter over medium heat. Add butter and oil - heat until bubbling, then add zucchini, mushrooms, garlic and onion to the pan. Cook, stirring, until starting to soften, about 2 minutes. Increase heat to medium-high and add wine. Cook, scraping up any browned bits, until the liquid has mostly evaporated, about 2 minutes. Add tomatoes, cream cheese, Italian seasoning and the remaining salt and pepper to taste. Bring to a simmer and cook, stirring to melt the cream cheese, for 5 minutes. Serve topped with basil.
