Ingredients

    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
    Garlic, 2 cloves
    *Extra Virgin Olive Oil, 2 tbsp
    Pepper, black, 1 tbsp
    Basil, 2 tbsp
    Oregano, ground, 1 tbsp
    Romano Cheese, 3 oz
    Red Ripe Tomatoes, 4 cup, diced

Directions

Slice eggplant length wise into 4 one inch thick steaks. Brush with olive oil, pepper, and grill until browned on both sides. Place on baking sheet and top with diced tomatoes, shaved garlic, basil oregano, and romano cheese. Place in 350 degree oven for 20 minutes. Serve with salad and vegetable side of your choice.
