    I actually use the yukon gold potatoes because they are such a pretty color. Better if you don't overcook.
    Chop the parsley and chives to desired fineness. Mix it all up.


Boil potatoes in the skins to just about done - keep somewhat firm.
Cut into quarters and let cool.
Chop the parsely and chives to your desired fineness.
Place potatoes in a large bowl, add vinegar cashew mayo and chopped herbs and mix. You can serve immediately still warm if you like, but it's better the next day.
